Last week at work was…not good. Meetings every day, curriculum night, tons of behavioral issues with my kiddies. It was pretty much a mess. But! But. Apples. One of my mental happy places was reminiscing about my apple picking trip with Steven and his family last Saturday. We headed up to Apple Hill Farm in New Paltz, which is about an hour north of where I live. It’s also where my little brother goes to college, so we made plans to hang out with him, too! Double whammy!
The day was absolutely gorgeous, with barely a cloud in the sky, but it was a bit too warm for my liking. Last year we went apple picking some time in October and it was also a pretty hot day. Still, I dressed in plaid and wore my boots because damn it, it’s autumn! Apple Hill Farm is a lovely place, but I was very confused about the tree layout. Good thing they had multiple crates of apples at the top of the hill, all labeled, with several varieties. I discovered an apple I had never had before, opalescent, and that was one of the highlights of the afternoon. Opalescent apples are huge and crisp and juicy! We picked them right off the trees and bit into heaven. Om freaking nom.

Yesterday we made two apple strawberry pies, apple scones, apple turnovers with gorgonzola, honey, and thyme, and apple and pork dumplings! We still have two more recipes we want to try out, too! So. Many. Apples.
